The Vintage Executive Chef, Tony Maher

Enticed from Exotic Island escapes where he honed his culinary skills, Tony brings a wealth of knowledge and experience to The Vintage, where he can indulge his exceptional palate for food & wine matching.

After completing his apprenticeship in Canberra, Tony then made his way through the ranks working at a range of prestigious Australian & overseas hotels.

In mid 1996 Tony secured the Head Chef role at Rae's at Wategos's in Byron Bay, a seven room boutique hotel.

This lead to an overseas appointment as Private Chef in Palm Beach, Florida USA for the Owners of the Wakaya Club, preparing European cuisine & weekly dinner parties. He was then appointed Executive Chef / Food & Beverage Manager at the luxurious nine bure private island resort - Wakaya Club Fiji.

Arriving back in Australia Tony commenced as Chef de Cuisine at La Fontaine fine dining restaurant Hayman Island Resort and was then promoted to the role of Executive Sous Chef at Hayman Island Resort, where he continued to work for 3 ½ years.

Later moving to Sydney, Tony worked for Intercontinental Hotels group as Executive Chef, for the airport property and as Executive Chef for a Private Retreat with catering by Flying Fish Restaurant, a Sydney Morning Herald 1 Chef's hat rated property.

Tony has wasted no time in stamping his signature on the restaurant, introducing specialty dinners including Chef's Table degustation at The Legends Grill restaurant, where guests can really appreciate quality food matched with award winning Hunter Valley wines. It is an intimate style of wine dinner, Tony chats about the raw produce and preparation of each course matched with local Hunter Valley wines.
